LEMON-Lime POSSET EASTER RECIPE

Before you read this recipe, I need you to know a couple of things. I am not a perfect mom, I tend to overthink, control, and forget to enjoy the simple things. I still don't know what I am doing (although I am learning along the way) with my first. I feel more confident with my second, only because I have walked that similar path of toddlerhood with my oldest. So I am in no way sharing this because I have everything figured out. But I do know that I love creating, and my kiddo loves to be a part of whatever I am doing.


My sister is the master of whimsy, and even before motherhood, she would naturally touch something and it turned into magic. So it was no surprise when she encouraged me to buy a set of 12 glass goblets etched with flowers at an estate sale. I almost sold them recently because they just sit in my cabinet not being used. Until I discovered this 3 ingredient recipe that would be perfect to use for posset.



I wanted to share this simple, yet delicious dessert with you all to inspire you that every child loves to be a part of what we are doing, and there are a lot of things they are capable of if we give them the space, patience, and time to do it.

My 4 year old has been showing me that he wants to do things by himself by stopping me when I try to help him. So I let him take the lead on this one. The recipe calls for 4 lemons, but we only have 1. Instead we used 1 lemon and 3 limes.


Start by getting the zest off of your fruits and and cutting them in half to juice. While you are doing this, you can put the heavy cream with the sugar in a pot to cook on LOW, stirring occasionally, until the sugar dissolves. This takes about 5-10 minutes for an electric range, and 2-5 minutes on a gas range.


Don't forget to add the zest! I used a peeler to peel the skin which took less time and less mess.

When the sugar is incorporated, take the mixture off of the stove and add your juice. You can also do this with strawberries or whatever fruit you have on hand. If you do a different fruit like a berry, you can put them in a blender, and strain them for their juice to keep the smooth texture for the posset.

When the mixture is complete, pour into individual cups. Strain your mixture for a smoother texture. Since I used the skin peeler vs the zester, I didn't skip this part, but if you zest your fruits, you don't have to if you appreciate texture. This recipe made 6 individual servings. Put the cups in the fridge to chill for 2-3 hours. I added some flowers from our yard to embelish on top and it happens they are called Star-of-Bethlehem flowers. Very fitting for Easter!


You can also put sugared lemons on top if you don not have any flowers on hand.


I used plastic cups you can find here for the kiddos, and my vintage glass cups I bought from an estate sale.


Follow the recipe below!


2.5 cups (600ml) of heavy cream

1/4 cup or 1/2 cup (100-120ml) of sugar

Juice + Zest of 4 lemons or limes


I hope you enjoy this with your toddler/kiddo! Mine was very proud when we tried the final product. Cheers to raising kids who believe they can do hard things.
